My husband and I love to travel and hope to explore all that we can of this amazing world in our lifetime. As much as I want to experience the rich history and culture of places like Asia and Europe, at this point in our lives a “real” vacation means relaxing, preferably somewhere tropical – truly getting away from it all! In a few weeks, we are headed out to a tropical destination to celebrate a special anniversary. I am counting down the days!
One of my favorite parts of traveling to the islands is the plethora of tropical fruits that seem to come with every meal – papaya with granola in the morning, mango salsa to top the fresh catch of the day, and some kind of pineapple or guava goodness for dessert.
I’ve noticed when I start my day with a smoothie or fresh-pressed juice, I feel energized instead of sluggish. Mangoes and coconuts have always been two of my favorites fruits in the tropical category. I decided to test out a combination of those flavors that would inspire me to tackle my day (currently filled with chasing a toddler) AND give me a taste of the tropics while I anxiously wait for my vacation to commence.
I added chia seeds to the fruity goodness for the health benefits such as omega-3 fatty acids, fiber, protein, calcium, and antioxidants. The addition of cinnamon and nutmeg gives a boost to your immune system and reduces inflammation in the body and coconut milk falls into the category of healthy fats which are essential for your body to function properly.
The smell and taste of this smoothie reminds me of the rejuvenating island sun, tropical breeze, and the easy, healthy living that flows naturally when you live the island lifestyle. Ahhhhh….
Mango Chia Smoothie
Ingredients
- 1 banana
- 1 ½ cups frozen mango you could use frozen banana and fresh mango
- ¾ cup water
- ½ cup coconut milk I like Native Forest Classic
- Juice of one lime
- 1 Tablespoon of Chia seeds
- Dash of cinnamon
- Dash of nutmeg
- Coconut flakes for garnish optional
- Additional ice to reach desired texture
Instructions
- Place all ingredients in a Vitamix (or blender).
- Blend until thoroughly combined.
- If necessary, add ice or water to reach your preferred consistency and temperature.
- Garnish with coconut flakes, nutmeg, and/or a lime.
- Drink up and be healthy!
