Italian Antipasto Salad

This delicious Italian inspired Antipasto salad is a result of the ingredients I had on hand, one of those being the amazing Dubliner cheese by Kerrygold. If you haven’t tried this cheese out yet, you simply haven’t lived.  It is legit seriously!  So in Italian Antipasto means appetizers before a large Italian meal.  These appetizers will usually include, meats, cheese, olives etc.  Hence my naming of this an antipasto salad.  With that said, don’t be fooled this is no appetizer it is a calorie packed real person meal!  And the good news is its a real person meal for a real person with little time.  This salad is a result of my not being in the kitchen the night before…so you are welcome for my laziness.  I’ll try and do that more often.

Ingredients
  

  • 2 cups lettuce or mix greens washed and patted dry
  • 6-8 oz of salami I used a lunch meat variety
  • 1 oz Dubliner cheese could use Parmesan or a variety that you prefer
  • 1/2 cup chopped red bell pepper
  • 6 kalamata olives pitted and cut into quarters
  • 1/2 avocado sliced
  • 2 Tbsp Creamy Balsamic-garlic Vinaigrette

Instructions
 

  • In a Bowl add the lettuce, then layer the meat, cheese, bell pepper, olives and avocado.
  • Drizzle the Creamy Balsamic Vinaigrette over top and Enjoy!
