Healthy Banana Bread with Seasonal Pears

If you’re after a healthy Sunday afternoon treat, look no further than this quick, easy and totally delicious healthy banana bread with pear! It’s both gluten and dairy-free and full of fibre and good omega 3 fats.

In the spirit of seasonal eating, I wanted to include some seasonal fruit in this healthy banana bread recipe and I’m glad I did! Pears are out in abundance at the moment, and for this recipe I used beautiful golden Beurre bosc pears which work really well in desserts.

Using flaxseed is a great way to naturally replace gluten-containing grains which can be inflammatory to the body, and the combination of coconut flour, flax AND pear makes this a fibre packed delight!

Why it’s good for you:

  • Bananas are rich in vitamin B6 which maintains the healthy functioning of the nervous system and manganese which is important for everyday skin health and blood sugar regulation.
  • Pears are high in fiber to maintain good digestive health along with phytonutrients that have been shown to provide anti-inflammatory and antioxidant benefits to improve cellular health. Recent studies have shown that the skin of pears contains at least three to four times as many phytonutrients as the flesh as well as about half of its total dietary fiber. So leave the skin on whenever you can (including in this recipe)!
  • Flaxseeds are the richest source of a plant-based omega-3 fatty acid called alpha-linolenic acid (ALA). ALA reduces inflammation in the body, can help maintain digestive health and provide essential fats to improve skin, hair and nails. Flaxseed is also high in both soluble and insoluble fiber which can support colon detoxification, fat loss and reduce sugar cravings1.
  • Coconut Flour is another great gluten-free flour alternative that is full of fiber, protein and healthy fats. These healthy fats are called medium chain fatty acids (MCFA) which are used for fuel by the body easily, and help to support a healthy metabolism along with balanced blood sugar levels.

Ingredients
  

Dry Ingredients

  • 3/4 cup coconut flour
  • 1/4 cup arrowroot powder
  • 1/4 cup ground flaxseeds
  • 1 tsp ground cinnamon
  • 1/2 tsp grated or ground nutmeg
  • 1/2 tsp Himalayan sea salt
  • 1 1/2 tsp baking powder

Wet Ingredients

  • 5 eggs
  • 1 cup mashed ripe banana about 1 1/2 medium
  • 1 pear chopped into small chunks
  • 1/4 cup coconut oil
  • 1/4 cup raw honey
  • 2-3 dates finally chopped into a paste

Optional for topping

  • shredded coconut or
  • chopped walnuts
  • sliced pear

Instructions
 

  • Preheat oven to 350° F and line a standard sized loaf tin with baking paper
  • In a medium sized bowl mix together the dry ingredients. In another bowl, mix the wet ingredients thoroughly with a wooden spoon until well combined. Add the wet ingredients to the dry ingredients and mix together until a thick batter forms.
  • Pour batter into cake tin and top with sliced pears and shredded coconut (optional)
  • Place in preheated oven and cook for 50 - 60 mins until cooked through.
  • Allow to cool for 10-15mins on a wire rack and enjoy!

  • I actually forgot to add in some chopped walnuts into the batter as originally planned, so I'll be trying that next time. If you feel like experimenting I'd love to know how it turns out!
