Preheat oven to 350° F and line a standard sized loaf tin with baking paper
In a medium sized bowl mix together the dry ingredients. In another bowl, mix the wet ingredients thoroughly with a wooden spoon until well combined. Add the wet ingredients to the dry ingredients and mix together until a thick batter forms.
Pour batter into cake tin and top with sliced pears and shredded coconut (optional)
Place in preheated oven and cook for 50 - 60 mins until cooked through.
Allow to cool for 10-15mins on a wire rack and enjoy!

I actually forgot to add in some chopped walnuts into the batter as originally planned, so I'll be trying that next time. If you feel like experimenting I'd love to know how it turns out!
