Garlic Parmesan Roasted Cauliflower

I love vegetables…I really do and am not just saying that on the off chance that my kids may read this. To be honest, they could give a c-rap that Mommy has a blog…my youngest only cares about a dog that has one. (Nickelodeon anyone? No? Lucky you)

The thing is, no matter how much you like vegetables…they can get boring! I am just as big of a fan of the convenience of those bags of steam-able frozen veggies as the next gal. They are quick, they are nutritious (as long as you get the ones sans delicious cheese sauce), and we can say that we did our part as “responsible adults”. However, with just a couple of extra minutes and the time it takes for your entree to be prepared, you can have something so flavorful vegetables that you and your family will change your minds about the “v” word.

Garlic Parmesan Roasted Cauliflower…..doesn’t that just sound so much better? You will seriously be eating this non-stop. You know it’s good when you are passing up more pasta or potatoes for more of this! Best thing, this recipe is just as awesome using broccoli, zucchini (have to adjust baking times), and brussel sprouts!

Garlic Parmesan Roasted Cauliflower

Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes

Ingredients
  

  • 2 heads cauliflower cored and cut into florets
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp basil dried
  • 2 Tbsp parmesan cheese
  • olive oil to drizzle over pan and cauliflower as desired

Instructions
 

  • Preheat oven to 450 degrees.
  • Combine spices and parmesan in small bowl.
  • Drizzle olive oil to lightly coat a large shallow cookie sheet or jelly roll pan.
  • Evenly spread out cauliflower pieces in single layer. If you had large cauliflower heads and need two pans...go for it 🙂
  • Drizzle olive oil liberally over the cauliflower.
  • Sprinkle on the spice/cheese mix evenly.
  • Roast for about 30 minutes or until cauliflower slightly softened and has that beautiful roasted golden color!
