Maple Bacon Biscuits

Bacon….my kids go extremely nuts over bacon. When I say nuts, I mean a “running from the upstairs mid game playing because one of them smelled bacon cooking” nuts. I mean a “have to hide the cooked bacon I require for a recipe I am making so it doesn’t get eaten when I turn my back” nuts.  Me? Oh, I have a love/hate relationship with bacon. I love it, my willpower hates it…but then again I hate my willpower sometimes too. Great thing about a house full of bacon lovers is that thanks to Pinterest and about EVERY OTHER site out there (including this one now I guess) we are never in short supply of new bacon recipes to try. This latest one actually came from  King Arthur Flour. We tweaked it just a tad…adding a couple things to the actual recipe and taking it over the top with a sweet and buttery syrup right when you serve it. The syrup at the end…totally optional. These are plenty sweet without it so feel free to leave it off. It just adds something extra to the biscuit.

I highly recommend greasing the pan AND using parchment to line the bottom. While the original recipe did not mention using parchment paper, a few of the reviews did due to losing a lot of the “topping” to the pan.

For about 10 minutes of prep work and roughly 15 of baking time…this is definitely a simple and tasty Sunday morning breakfast that will be sure to be a keeper in your house! Maple Bacon Biscuits are a MUST!

Instructions

  • Preheat oven to 475 degrees.

For the topping

  • Grease a 9 in (2 in deep) round or 8 inch square baking pan. Line bottom with parchment paper.
  • Cook the bacon until medium brown...It will continue to cook in the oven ..So don't overdo it.
  • Chop the bacon and add to bowl with the brown sugar, flour, syrup and melted butter.
  • Stir to combine and pour into prepared baking pan. Spread evenly.

For the biscuits

  • Combine flour, baking powder and salt in large bowl.
  • Cut in the butter until crumbly.
  • Add milk and stir to form a sticky dough.
  • Spoon dough, by heaping tablespoons, over the maple bacon topping in pan.
  • Combine the cinnamon and sugar and sprinkle over the dough.
  • Bake for 10 minutes...Then turn off oven and leave biscuits sit in the oven for another 5 minutes until golden.
  • Remove from oven and invert onto plate immediately.

For the syrup: (optional)

  • Combine butter, syrup and cinnamon in small bowl.
  • Melt together in microwave. Stir and drizzle over biscuit when serving.

Notes

These are plenty sweet without the addition of the buttery syrup at the end..It just gives a nice extra something to the biscuit. Feel free to exclude it!
