Lemon is one of my favorite flavors in spring. One of my families’ favorite desserts is lemon meringue pie, but I rarely make it because there are SO many steps. When I’m craving a sweet lemon dessert, I make these easy lemon bars. The recipe requires only about 15 minutes of hands on time, and the finished bars come out delicious every single time.
I made this recipe for Easter brunch, and it was such a hit, it’s been requested for Mother’s Day as well!

Best Lemon Bars
Ingredients
- 1 cup finely sifted white flour can use white whole wheat if you choose
- 1/2 cup softened butter
- 1/4 cup powdered sugar
- 1 cup white sugar
- grated peel of 1 lemon
- 2 tbsp fresh squeezed lemon juice
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- extra powdered sugar to garnish

Instructions
- Combine the flour, butter, and 1/2 cup powdered sugar in a medium mixing bowl until a loose dough forms. Press the dough into a buttered 8″x8″ pan. Bake for 20 minutes at 350°.
- Using a mixer, beat the white sugar, lemon peel, lemon juice, eggs, baking powder, and salt, until they are thoroughly combined. This mixture should be fluffy.
- Pour the egg mixture into the hot crust.
- Bake the whole thing in a 350° oven for 25 minutes.
- Cut into bars and sprinkle with powdered sugar before serving.
