Smoked Mac N’ Cheese

Smoked Mac N’ Cheese

Ingredients
  

  • 4 oz. smoked cheddar grated
  • 4 oz. gouda grated
  • 4 oz. mozzarella grated
  • 1 c. half and half
  • 2 tbsp. organic cultured butter
  • 16 oz. gluten-free macaroni noodles I used Tinkayada brand, the best GF noodles I've found to date.

Instructions
 

  • Cook noodles according to package directions, drain, and set aside.
  • Warm butter and half and half in a saucepan on medium heat. Stir until the butter is melted and the mixture is heated through.
  • Gradually add the grated cheese and whisk until the mixture is smooth.
  • Add the cheese sauce to the noodles and stir to coat evenly.
  • Add salt and black pepper to taste, and any other spices if desired (I like smoked paprika and garlic powder, in addition to black pepper and a pinch of salt.)

Notes

I learned this lesson the hard way, but using pre-grated cheese with anti-caking agents will make a fantastically gross, gritty sauce. Learn from my mistakes and grate your own cheese!
