16oz.gluten-free macaroni noodlesI used Tinkayada brand, the best GF noodles I've found to date.
Instructions
Cook noodles according to package directions, drain, and set aside.
Warm butter and half and half in a saucepan on medium heat. Stir until the butter is melted and the mixture is heated through.
Gradually add the grated cheese and whisk until the mixture is smooth.
Add the cheese sauce to the noodles and stir to coat evenly.
Add salt and black pepper to taste, and any other spices if desired (I like smoked paprika and garlic powder, in addition to black pepper and a pinch of salt.)
Notes
I learned this lesson the hard way, but using pre-grated cheese with anti-caking agents will make a fantastically gross, gritty sauce. Learn from my mistakes and grate your own cheese!
