Chocolate Pecan Pie

With the perfect chocolateyness, nuttiness, and flakiness from the crust, this pie is sure to impress the Thanksgiving crowds! And with Thanksgiving being less then a week away you need something you can bake that’s super simple, which is why this pie comes in handy. It is so simple the hardest part is having to smell it baking in your oven! You can get the recipe for the perfect, simple, and flakey pie crust here!

My favorite parts of pecan pie are the crunch of the nuts, the sweetness of the filling, and that rich, flakey crust! Oh man the crust. And I just had to kick this pie up a notch with gooey, rich, chocolatey filling! Because of course I couldn’t just give you a plain old pecan pie I had to put two things that I love together, as always!

I’ll walk you through the very quick and simple steps of making the pie.

1) Preheat the oven to 400F (204C or Gas 6). In a large bowl whisk the eggs. Once they’re beaten you can add the corn syrup, salt, vanilla, and sugar. Whisk it all to combine.

2) In a medium-sized microwave safe bowl melt the chocolate chips for 25 seconds at a time stirring after each 25 seconds until they’re melted. Now you’re going to temper the eggs by adding a little bit of the egg mixture to the melted chocolate whisking the whole time. Next stir all of the chocolate into the egg mixture. Stir very well to combine then add the chopped pecans. Once everything is well combined pour the filling into the pie crust and bake at 400F (204C or Gas 6) for 10 minutes then turn the heat down to 350F (177C or Gas 4) and bake for another 45-55 minutes or until the edges start to pull away from the crust and the pie is mostly set in the middle (it may still jiggle a bit), remove from the oven and allow to set completely before serving about 4 hours. You can also put the pie in the fridge to help it set quicker.

Ingredients
  

  • Homemade pie crust or you can use a premade pie crust
  • 4 large eggs room temp
  • cups light corn syrup
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 1 cup semisweet chocolate chips melted
  • 1 cup raw chopped pecans
  • 1 cup whole raw pecans for the top

Instructions
 

  • Preheat oven to 400F (204C or Gas 6).
  • Whisk the eggs until they are beaten then add the corn syrup, vanilla, salt, and sugar. Whisk to combine, set aside.
  • In a medium-sized microwave safe bowl melt the chocolate chips stirring every 25 seconds until melted. Before you add the melted chocolate to the egg mixture pour a little bit of the egg mixture into the melted chocolate whisking the whole time, then stir all of the chocolate into the egg mixture mixing well.
  • Stir in the chopped pecans. Once incorporated pour into the prepared pie crust. Layer the top of the pie with whole pecans as shown in photos. Bake in the preheated oven at 400F (204C or Gas 6) for 10 minutes. After 10 minutes turn the oven temp down to 350F (177C or Gas 4) and bake for 45-55 minutes or until the edges are set and just the middle giggles.
  • Place on a cooling rack and allow to set for at least 4 hours. You can put the pie in the fridge to speed up the setting time.

Notes

Pie is best enjoyed the day it is baked but it can be stored at room temp for up to 3 days and in the fridge for up to 5 days.
