Homemade pie crust or you can use a premade pie crust
4large eggsroom temp
1¼cupslight corn syrup
1teaspoonvanilla extract
½cupgranulated sugar
½teaspoonsalt
1cupsemisweet chocolate chipsmelted
1cupraw chopped pecans
1cupwhole raw pecans for the top
Instructions
Preheat oven to 400F (204C or Gas 6).
Whisk the eggs until they are beaten then add the corn syrup, vanilla, salt, and sugar. Whisk to combine, set aside.
In a medium-sized microwave safe bowl melt the chocolate chips stirring every 25 seconds until melted. Before you add the melted chocolate to the egg mixture pour a little bit of the egg mixture into the melted chocolate whisking the whole time, then stir all of the chocolate into the egg mixture mixing well.
Stir in the chopped pecans. Once incorporated pour into the prepared pie crust. Layer the top of the pie with whole pecans as shown in photos. Bake in the preheated oven at 400F (204C or Gas 6) for 10 minutes. After 10 minutes turn the oven temp down to 350F (177C or Gas 4) and bake for 45-55 minutes or until the edges are set and just the middle giggles.
Place on a cooling rack and allow to set for at least 4 hours. You can put the pie in the fridge to speed up the setting time.
Notes
Pie is best enjoyed the day it is baked but it can be stored at room temp for up to 3 days and in the fridge for up to 5 days.
