Bacon and Egg Breakfast Pizza

Breakfast + Pizza. Need I say more?

This recipe is super easy but looks impressive on a large platter which makes it perfect for a brunch with friends and family. In fact, the first time I ever made this was for a Mother’s Day Brunch I had planned for my own family and friends. Everyone thought the idea was pretty awesome so I figured I should share!

I used minimal cheese on my breakfast pizza because I like to try to keep my “indulgences” fairly light. Feel free to increase the amount of cheese if you so choose but the nutrition information posted below will be different. I think that because you are only using 1 cup of gooey cheese, the flavor of every other component is allowed to shine a little more. Plus you don’t feel like a hot mess after you’ve eaten breakfast!

I used my own recipe for the pizza dough (whole wheat and super delicious!) which I will be posting very soon! So look out for that because it is a super versatile recipe to have in your arsenal. But you can use your very own pizza dough recipe or buy some pre-made dough from the store (I like the whole wheat one from Trader Joe’s). If using a pre-made dough make sure to take it out of the fridge and let it rest for about 30-45 minutes before using to ensure maximum flavor and ease of use!

Feel free to add whatever other toppings you may like on your breakfast pizza. Maybe some red onion or even some breakfast turkey sausage. Play around and enjoy it!

Bacon and Egg Breakfast Pizza

Ingredients
  

  • 1 recipe whole wheat pizza dough look for up coming post or use store bought pizza dough
  • 4 slices nitrate-free peppered bacon
  • 4 eggs
  • 8 ounces shredded mozzarella cheese
  • 4 ounces Parmesan
  • 3 green onion chopped
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped cilantro
  • 2 tablespoons chipotle barbecue aioli

Instructions
 

  • Preheat the oven to 400 degrees.
  • Cook the bacon until it is mostly cooked through but still a little soft. Drain the fat and set aside.
  • Roll out the pizza dough until it is about 1/4 inch thick all the way across. It should fit onto a medium sized sheet pan.
  • Line the pan with parchment paper and transfer the dough to the sheet pan.
  • Spray olive oil over the dough to moisten it slightly. Sprinkle with salt and pepper.
  • Top the dough with the mozzarella, parmesan and bacon bits. Carefully create 4 slight indentations in the dough and crack and egg into each. Lightly sprinkle the eggs with salt and pepper.
  • Carefully transfer the pizza to the oven. Bake until the dough has a nice crust, the egg whites are firm and the yolk is still a little runny, about 15 minutes.
  • Remove from the oven and sprinkle with green onions, parsley, cilantro and a drizzle of aioli. Cut into 8 pieces and enjoy!
