4slicesnitrate-free peppered bacon
4eggs
8ouncesshredded mozzarella cheese
4ouncesParmesan
3green onionchopped
1tablespoonchopped parsley
1tablespoonchopped cilantro
2tablespoonschipotle barbecue aioli
Instructions
Preheat the oven to 400 degrees.
Cook the bacon until it is mostly cooked through but still a little soft. Drain the fat and set aside.
Roll out the pizza dough until it is about 1/4 inch thick all the way across. It should fit onto a medium sized sheet pan.
Line the pan with parchment paper and transfer the dough to the sheet pan.
Spray olive oil over the dough to moisten it slightly. Sprinkle with salt and pepper.
Top the dough with the mozzarella, parmesan and bacon bits. Carefully create 4 slight indentations in the dough and crack and egg into each. Lightly sprinkle the eggs with salt and pepper.
Carefully transfer the pizza to the oven. Bake until the dough has a nice crust, the egg whites are firm and the yolk is still a little runny, about 15 minutes.
Remove from the oven and sprinkle with green onions, parsley, cilantro and a drizzle of aioli. Cut into 8 pieces and enjoy!
