In a large mixing bowl, combine the ground turkey and beaten eggs. Use your hands to mix everything together until it’s well blended.
Next, divide the mixture into four equal parts, aiming for about 5.8 oz each.
Cover the patties with plastic wrap and refrigerate for at least 30 minutes to help them firm up.
When you’re ready to cook, preheat your grill or skillet on high heat and add a little oil. Cook the turkey patties until they're almost done. Right before you take them off the heat, add a slice of brie on top of each patty to let it melt.
To assemble, place a handful of arugula on the bottom of each bun. Add the turkey patty, then spread a layer of Wood’s Cranberry Sauce on top. Finish with more arugula and some snow pea sprouts for a fresh crunch. Enjoy your delicious creation!
