Instructions
To make the biscuits
Preheat oven to 400ºF. Line a large cookie sheet or jellyroll pan with parchment paper or a silicone baking pad; set aside.
In a large bowl whisk together the flour, salt, baking powder, and baking soda. Cut in the shortening and butter until the mixture becomes crumby.
Fold in the buttermilk. Once it’s somewhat mixed in I like to go in with my hands to bring the dough together.
Once the dough comes together, turn it out onto a floured work surface and roll the dough into a large rectangle about ½ an inch thick. Using a biscuit cutter, cut the dough and place the biscuits on the prepared sheet leaving a good amount of room between each biscuit. You may have to bake them in 2 batches.
Before baking the biscuits, brush them with some of the melted butter reserving some butter for after baking.
Place the biscuits in the oven and bake them for 12-14 minutes or until lightly golden brown.
Once the biscuits are baked, add the honey to the reserved melted butter and brush the warm baked biscuits with the mixture and enjoy!
Biscuits will stay fresh for up to 5 days stored in an airtight container.
