Preheat your oven to 375°F and cover a large baking sheet with parchment paper.
Unroll the crescent rolls and separate the dough into triangles. Arrange them in a sunburst shape with the pointed ends sticking out and the bases overlapping.
Spread the cranberry sauce over the dough. Place the brie cubes and crumbled bacon on top. Fold the tips of the triangle pieces over the filling, tucking them under the base to keep everything secure.
In a small bowl, whisk together the eggs. Brush the egg wash over the top of the dough, then sprinkle with kosher salt and black pepper.
Bake in your preheated oven for 15-20 minutes until the dough turns golden brown. If you'd like, garnish with parsley before serving.
