Instructions
Preheat your oven to 350°F.
Grease a 9 x 13 inch baking dish with some butter.
If your tortillas feel stiff, pop them in the microwave for a few seconds to soften.
Take about a heaping 1/4 cup of your pie filling and place it slightly off-center on each tortilla. Sprinkle with the cinnamon to taste.
Carefully roll each tortilla up and position them seam side down in the prepared baking dish.
In a medium saucepan, combine butter, white sugar, brown sugar, and water; bring this mixture to a boil.
Lower the heat and let it simmer for 3 minutes while stirring continuously.
Drizzle this sweet sauce over the rolled enchiladas, add extra cinnamon if you like, and let them sit for about 45 minutes.
Bake in your preheated oven for 20 minutes or until they're beautifully golden.
Serve them warm, ideally topped with a scoop of vanilla ice cream or whipped cream, and drizzle with caramel sauce if desired.
