One Dirty Pan Breakfast Smash Up

Weekends mean breakfast in our house.

Not that we don’t eat breakfast during the week, but for us adults (we use that word loosely) breakfast usually equals coffee.

On weekends however, I genuinely look forward to a hot breakfast. I would look forward to it more if it was made by someone besides me…but I still look forward to it.

The only thing I don’t like is that by the time you are done with the eggs…the bacon or sausage…the potatoes (those are a must).. you have like 8 million dishes to wash. Ok, so it’s really like 3…but after a long week…its 8 million.

That is why this One Dirty Pan Breakfast Smash Up reigns supreme. And…it makes enough to feed your normal fam and those extra kiddos you end up with on the weekends as well.

One big  pan, all your fave breakfast items, done.

My brother-in-law was the first person I saw do this…and I am pretty sure I looked at him like he was Nikola Tesla.

In 1 Tbsp oil, brown the ground breakfast sausage breaking it up into smaller pieces while it cooks. Remove sausage from pan.

Add a bit of butter and oil to the big  pan. Add diced potatoes. I don’t even peel them…they’re rustic like that. Or I am lazy. Tomato, tomato.

Add seasonings and stir to combine. Lightly fry until golden and beginning to soften to fork tender.

Throw your sausage back into the pan and stir. Scoot the potatoes and sausage towards the sides of the pan making a clear spot in the middle.

After adding a bit more butter, pour in your whisked eggs. Move them around that middle space so they begin to scramble. Then, just mix them in with everything and continue to cook until eggs fully done!

To serve, sprinkle some shredded cheese over top and allow to melt.

After all, breakfast has to have cheese too. That’s a rule somewhere.

NOTES
Feel free to leave out the cheese if you like…but, you should splurge 🙂
You can use any type of ground breakfast sausage you like! We use the spicy flavor sometimes, the maple…it’s your choice!
You can definitely short cut it with frozen diced potatoes, just prepare like the package says instead of following the method below.

Ingredients
  

  • 1 lb. roll of Ground Breakfast Sausage like Bob Evans, Jimmy Dean
  • 4 Tbsp Butter
  • 2 Tbsp Oil
  • 3-4 Medium size Potatoes diced
  • 1 tsp Season Salt
  • 1/2 tsp Black Pepper
  • 1 Tbsp Dried Parsley
  • 1 tsp Garlic Powder
  • 12 Eggs cracked and whisked
  • 1/4 Cup Milk
  • 1 Cup Shredded Cheese

Instructions
 

  • Dice potatoes into fairly even sizes and set aside.
  • Whisk eggs with milk and set aside.
  • Heat large and deep skillet over medium high heat with 1 Tbsp oil.
  • Brown the ground breakfast sausage, breaking it up into smaller bits as you go.
  • Remove sausage from pan, keeping drippings in pan.
  • Add 3 Tbsp butter and 1 Tbsp oil to pan. Reduce heat to medium.
  • Add potatoes to pan and sprinkle seasonings over them stirring to coat.
  • Brown potatoes on one side, fighting urge to flip so they will crisp, for about 8-10 minutes. Then flip and cook 8-10 minutes more.
  • When golden and softened, add sausage back to pan and make a ring around edge of pan with potato/sausage mix leaving a space in the middle.
  • Add 1 Tbsp butter to middle of pan then pour in eggs. gently stir the egg in the middle of the pan to begin to scramble.
  • Once they start to cook, mix everything in pan all together and continue to cook until eggs done.
  • Test seasoning and add more salt and pepper if needed.
  • Top with cheese and allow to melt and serve!
