Hello friends!
I hope you all had a lovely Christmas and/or fantastic day off to enjoy with family and friends!
I know I did.
My vacation has been so lovely in fact, that managing to get any work done at all has been sort of well,
how would I put this….
impossible?
Am I allowed to blame the weather on this one? It’s SEVENTY degrees and incredibly sunny down here, and I’m trying to soak in as much Vitamin D as possible before I have to fly back up into the tundra.
A tundra in which it’s been more overcast than sunny, I might add.
ANYWAY – I won’t get bogged down in the cold weather that is to come because I have at least three more months of it before I can break out into Pina Colada-everything and start eating blueberries like it’s my job.
For today, I have a supreme chocolate cookie to share with you.
Technically, I was supposed to share it before Christmas, hence all the presents and tinsel in the background, but really, Nutella is awesome at any and ALL times of the year.
Chewy chocolate cookies filled with a smooth and luscious nutella center, this cookie is for all my chocoholic friends out there.
If you loved the classic fudgy brownies of last week, you will fall head-over-heels for these cookies!
As someone who ate seven a few of them while snowed in a few weekends ago, I can attest to their awesomeness.
I can also imagine that filling these cookies with other wonderful creamy spreads, like peanut butter or biscoff, would be absolutely heavenly.

Nutella Thumbprint Cookies
Ingredients
- 1 1/4 cups flour
- 3/4 cup cocoa powder
- 1 tsp baking soda
- 2 tsp cornstarch
- 3/4 tsp salt
- 1/2 cup 1 stick butter, softened
- 1/2 cup brown sugar packed
- 1/2 cup granulated sugar
- 1 egg + 1 egg yolk
- 1 1/2 tsp vanilla
- 1 jar Nutella you may need less, but just to be on the safe side!
- assorted sprinkles optional
Instructions
- Preheat the oven to 350 degrees and line two cookie sheets with parchment paper. In a medium bowl combine flour, cocoa powder, baking soda, cornstarch, and salt until well mixed. Set aside.
- In the bowl of your stand mixer (or a large bowl with a hand mixer) beat butter and both sugars until light and fluffy, 3-5 minutes. Beat in egg and egg yolk until fully incorporated, followed by the vanilla.
- On the lowest setting of your mixer, stir in the flour mixture until dough forms.
- Scoop out rounded tablespoons of dough and, using your thumb, push into the center to make an indentation. Place cookies (thumbprint side up) at least 2 inches apart on prepared cookie sheets.
- Bake at 350 degrees for 12-14 minutes or until edges just begin to brown. Remove from oven and let cook on cookie sheets for a few minutes before carefully removing to a wire rack to cool completely.
- Once cool, scoop nutella into a microwave-safe plastic bag and microwave for 15 second intervals until nutella is soft and pipe-able. Snip off a corner of the plastic bag and fill centers of cookies with nutella, approx 1 1/2 tsp per cookie. Feel free to add more or less as you see fit, though.
- Top with sprinkles and serve!
