California avocados are an ideal ingredient (especially in the summer) and loaded with nutrients. This green fruit provides ~20 essential nutrients, vitamins, and minerals. One really cool thing about avocados is they act as a booster of nutrients. Fat-soluable nutrients in other fruits and/or vegetables are better absorbed when eaten with an avocado, as avocados are a great source of healthy fats.
I like to keep things simple in the kitchen – easy and quick recipes. Avocados are so versatile and great with any meal or as a snack. I decided to utilize the nutrient dense fruit to create a breakfast recipe. During the work week, I pack my breakfast and take it to work, but on the weekends I like to make a hearty breakfast for my entire family. I just love breakfast sandwiches and thought a California avocado would be the perfect ingredient.
California Avocado Breakfast Sandwich
Ingredients
- 2 English Muffins of choice split in half (I prefer sprouted grains, so I use this brand)
- Pastured butter optional
- 2 pastured eggs poached
- 4 slices bacon cooked until crispy
- 1 California Avocado halved and cut into slices
- Salsa I used homemade
Instructions
- Toast English muffin, spread one side of muffin with butter.
- Place poached egg on top of English muffin with butter.
- Place two slices of bacon and avocado slices on top of poached egg.
- Top with salsa and other half of English muffin.
- Enjoy!
