  • 1 lb raw shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 ½ tablespoons minced garlic
  • 2 teaspoons minced fresh ginger
  • ½ teaspoon crushed red pepper flakes
  • ⅓ cup honey
  • ⅓ cup soy sauce
  • olive oil, for cooking
  • cooked white rice, for serving
  • steamed broccoli, for serving
  • thinly sliced scallion, for garnish

Directions

Place the shrimp in a resealable bag or medium bowl.

In a small bowl or liquid measuring cup, combine the minced garlic, minced ginger, olive oil, honey, and soy sauce to create the marinade.

Pour half of the marinade over the shrimp, massaging through the bag or stirring to coat. Reserve the other half of the marinade. Marinate the shrimp in the refrigerator for 15 minutes.

Heat a medium pan over medium heat with some olive oil. Remove the shrimp from the marinade and discard the used marinade. Add the shrimp to the pan and cook for about 1 minute, then flip.

Pour the reserved marinade into the pan and continue cooking until the shrimp are opaque and just firm, about 1 more minute. Remove the shrimp from the pan.

Continue cooking the marinade in the pan until it reduces and thickens, about 5 minutes.

Serve the shrimp over cooked white rice with steamed broccoli on the side. Pour the reduced sauce over the shrimp and garnish with thinly sliced scallions. Enjoy!
