Brussel Sprouts with Bacon and Apple

Need a Thanksgiving side dish idea? Seriously though….Thanksgiving is right around the corner guys, can you believe that? I honestly can not,I can’t even believe Halloween is already over. Luckily my kids don’t even seem interested in their Halloween candy anymore, so I suppose we can just trash it now right? Anyways my mind has been stuck 0n comfort foods ever since the temperatures dipped into the 60’s…I know that is probably not all that cold for most…but here is FREEZING. My fire place has been getting a lot of use lately and I am loving it! You know what else I am in love with? Brussel Sprouts…specifically these brussel sprouts cooked in bacon fat and with some sweet apples. I have also gotten my kids to love brussel sprouts…I mean there is not any better winning then that one guys, seriously. She gobbled these up for her after school “snack.” I have never really thought of brussel sprouts as an afternoon snack…but cook it and they shall come. The smells while they are cooking are ummm interesting, but well worth stinking up the house for, besides the smell of sizzling bacon trumps the sprouts anyways.

So one of our go to “I need to make a meal in less than 20 minutes,” meals is this plus the addition of some sliced up Aidell’s Chicken Apple Sausage. This is actually loved by everyone in the house, which makes life so easy on those super busy days, or a quick weekend lunch. Whether you need a quick meal to make or a fantastic Thanksgiving side dish, these guys are a must!

Speaking of Thanksgiving side dishes does anyone actually really like those green bean casseroles? I don’t really…gasp I know sorry green beans smothered in canned soup….they just don’t excite me, but you know what does? These brussel sprouts. and bacon….always bacon. So make these for your next Thanksgiving potluck or get together and impress the crowd, you will be glad you did I promise.

Look at that caramelized sprout…thats the good stuff right there, that little bit of caramelization that brings out the natural sweetness of vegetables and leaves you wanting to try new vegetables. I have now coined brussel sprouts as the gateway vegetable 🙂 Go get them and eat them up!

I have been attempting to watch Friends reruns while writing this…bad idea I love Friends so so much, was or is there ever any show that is better? NOPE…never don’t even try it guys. Comment and tell me who your favorite “Friend” is… For me its a toss up between Monica or Ross.

Brussel Sprouts with Bacon and Apple

Prep Time 10 minutes

Ingredients
  

  • 1 pound Brussel sprouts cut into bite sized pieces
  • 4 slices of bacon cut into one inch pieces
  • 1 large fuji or other sweet apple peeled and cut into bite sized pieces
  • 2 tbsp apple cider vinegar
  • salt and pepper to taste
  • 1 sweet onion, cut into 3/4-inch chunks optional

Instructions
 

  • Preheat oven to 400 degrees
  • In a cast iron skillet render the bacon until crispy then scoop out onto a paper towel to drain the fat. Reserve the bacon fat.
  • In the same skillet add the brussel sprouts and cook for a about 5 minutes.
  • Add the apples and cook for an additional 2 minutes.
  • Add in the Apple cider vinegar to deglaze the pan (bring up the stuck on bits of food)
  • Put the pan in the oven and cook for about 15 minutes until the brussel sprouts are caramelized and softened.
  • Enjoy
