In a large bowl, mix the extra-virgin olive oil and lemon pepper seasoning. Set aside.
Pat the chicken wings dry with a paper towel.
Carefully drop the wings into the hot oil and fry in batches for about 7-8 minutes. Use a meat thermometer to ensure each wing reaches an internal temperature of 165 degrees Fahrenheit.
Place the cooked wings on a wire baking rack and continue frying until all the wings are done.
