This Tex-Mex meatloaf is a flavorful twist on a classic dish, featuring a blend of ground beef, zesty salsa, and a cheesy filling. Perfectly baked for a satisfying meal that feeds the whole family!
In a large mixing bowl, blend the ground beef, eggs, minced garlic, and taco seasoning until they are thoroughly combined.
Transfer the mixture onto wax paper and form it into a rectangle shape.
Evenly distribute the chopped green chiles and half of the shredded cheese over the meat mixture.
Gently roll the meat to create a loaf. Use the wax paper to assist you and place it into a loaf pan.
Pour the salsa on top of the meatloaf and place it in the oven. Bake for 50 minutes.
Once baked, remove the meatloaf from the oven and sprinkle the remaining cheese over the top. Return to the oven for an additional 8-10 minutes until the cheese has melted.
When finished, remove the meatloaf and add your favorite toppings, such as cilantro, ranch dressing, avocado, and diced tomatoes. Enjoy!
