Preheat your oven to 430ºF / 220ºC and line a baking sheet with foil.
Cut the tops off of the jalapenos, slice them in half and remove the seeds. Then, slice each jalapeno half in half lengthwise to create fries.
In a bowl, whisk together the egg and milk with a pinch of salt and pepper.
In another bowl, mix together the breadcrumbs, parmesan, black pepper, garlic powder, and salt.
Dip each jalapeno strip in the egg mixture, then coat it in the breadcrumb mixture. Place the coated jalapeno fries on the prepared baking sheet. It's a good idea to keep one hand wet and one hand dry to avoid making a mess!
Once all the jalapeno fries are coated and on the baking sheet, place them in the oven for about 20-25 minutes, or until they're golden brown and crispy.
