Instructions
Begin by preheating your oven to 350°F.
For the Meatloaf:
In a skillet, melt the butter or drippings over medium heat. Add the diced onion and bell pepper, increasing the heat to medium-high, and sauté until they become caramelized, approximately 10-12 minutes. Stir in the garlic for an additional minute, then set aside to cool.
In a large mixing bowl, combine the ground beef and season with salt, pepper, Cajun seasoning, paprika, thyme, basil, and dry mustard. Follow with ketchup and Worcestershire sauce.
Soften the bread slices in the milk, then remove excess milk and crumble the bread into the meat mixture. Reserve any leftover milk.
Whisk the eggs together with the reserved milk, and add the sautéed vegetables into the meat mixture. Use a wooden spoon to mix everything gently, being careful not to overly compress the meat. If necessary, pour in some of the reserved milk to add moisture.
Form the meat into a loaf and place it into a baking pan, lightly pressing it to maintain its shape.
For the Glaze:
In a small bowl, mix the remaining ketchup, Worcestershire sauce, and brown sugar to create the glaze. Spread this mixture over the top of the meatloaf.
Bake the meatloaf in the preheated oven for about 60 minutes, or until the internal temperature reaches 160°F. If using a standard baking pan, drain any excess fat as it cooks.
