In a large bowl or stand mixer on medium-high speed, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, and the vanilla; beat until combined.
In a medium bowl sift together the flour, baking soda, and salt. Slowly add this mixture to the sugar and egg mixture on low speed; mix until combined. Fold in the chocolate chips.
Press the cookie dough into a greased cast iron skillet and cover with plastic wrap and place in the fridge for at least 2 hours or up to 2 days.
To bake the cookie
Preheat the oven to 330F
Once the oven is preheated bake the cookie for 20-25 minutes or until the edges are set you want the cookie to be a bit gooey.
Notes
Serve warm and top with your favorite ice cream.I used Bryer’s Vanilla Bean. Strawberry, mint chocolate chip, or chocolate would be delish as well!
