Instructions
Preheat your oven to 450°F and line a rimmed baking sheet with parchment paper.
Peel and chop the Yukon Gold potatoes into bite-sized pieces and place them in a large bowl.
In a smaller bowl, mix olive oil with paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper.
Drizzle the olive oil mixture over the potatoes and toss them to coat evenly.
Arrange the potatoes in a single layer on the baking sheet and bake at 450°F for 35-45 minutes, stirring every 10 minutes.
Check for tenderness and crispiness, and add extra salt if desired before serving.
