Instructions
Start by preheating your oven to 400°F. Line a large, rimmed baking sheet with parchment paper or a Silpat mat for easy cleanup.
Slice the garlic bulb horizontally across the middle, keeping the skin on. Cut the sweet potatoes into 3/4-inch thick rounds.
In a large bowl, toss the sweet potato slices and halved garlic with olive oil, maple syrup, sea salt, and black pepper until well coated.
Arrange the sweet potatoes and garlic, cut side up, in a single layer on the prepared baking sheet. Bake for 20 minutes.
After 20 minutes, take the baking sheet out of the oven, stir the sweet potatoes, and scatter the chopped bacon over the top.
Return the sheet to the oven and bake for another 25 to 30 minutes, or until the sweet potatoes are tender and the bacon is crispy. Enjoy!
