1/4cuproasted red and yellow peppersdrained and optionally sliced
1 to 2slicesof Monterey Jack cheeseabout 20 grams each (spicy variant if preferred)
6slicesof thin roast beef deli meatapproximately 60 grams
1.5 to 2tablespoonsof mayonnaiseenough to spread evenly on the bread
2slicesof multi-seed sandwich breador bread of your choice
Instructions
Toast your bread slices lightly if you're into that (totally optional though).
Slather each bread slice with a good layer of mayonnaise.
Start building your sandwich on one slice: first lay down the cheese slices, add the roast beef on top, followed by the colorful roasted peppers, onion slices, and finally, the crisp lettuce.
Cap it off with the other slice of bread, mayo side down. Press lightly to secure everything in place.
Slice if you like, or just dive right in and enjoy the blend of flavors!
