Instructions
Dice potatoes into fairly even sizes and set aside.
Whisk eggs with milk and set aside.
Heat large and deep skillet over medium high heat with 1 Tbsp oil.
Brown the ground breakfast sausage, breaking it up into smaller bits as you go.
Remove sausage from pan, keeping drippings in pan.
Add 3 Tbsp butter and 1 Tbsp oil to pan. Reduce heat to medium.
Add potatoes to pan and sprinkle seasonings over them stirring to coat.
Brown potatoes on one side, fighting urge to flip so they will crisp, for about 8-10 minutes. Then flip and cook 8-10 minutes more.
When golden and softened, add sausage back to pan and make a ring around edge of pan with potato/sausage mix leaving a space in the middle.
Add 1 Tbsp butter to middle of pan then pour in eggs. gently stir the egg in the middle of the pan to begin to scramble.
Once they start to cook, mix everything in pan all together and continue to cook until eggs done.
Test seasoning and add more salt and pepper if needed.
Top with cheese and allow to melt and serve!
