1cupgranulated sweetener of choicebrown, coconut, or sugar free subs
3/4cupcoconut oilmelted
1 1/2cupscocoa powder
1/2cuppeanut buttersmooth and creamy
4large eggscan use vegan subs like flax eggs
1/2cup+ 2 tbsp oat flour
2/3cupmaple syrup
1-2cupschocolatechopped, optional
1/4teaspoonsalt
Instructions
Preheat your oven to 350F. Line an 8 x 8-inch pan with parchment paper and set it aside.
In a small bowl, mix the oat flour, cocoa powder, and salt. Set aside.
In another bowl, whisk the peanut butter, maple syrup, coconut oil, and your choice of granulated sweetener until combined and glossy. Add the eggs and whisk well.
Combine the wet and dry ingredients, mixing until just combined. Fold in the chocolate, if using.
Pour the brownie batter into the lined pan and spread it out evenly.
Bake for 30-35 minutes, until a skewer inserted in the center comes out clean. Allow the brownies to cool completely in the pan before slicing.
