Preheat your oven to 400F. Get a large baking tray and line it with parchment paper, then set it aside.
In a small bowl, mix together the almond flour and baking powder.
In a microwave-safe bowl, put the mozzarella cheese and cream cheese. Heat them in the microwave for 20-second intervals until they're warm. Mix until smooth and combined.
Put the melted cheese mixture into a food processor with a dough blade. Add the eggs and dry ingredients, then blend until the dough is smooth.
Roll out the dough into a big oval shape. Sprinkle the shredded cheese on top, leaving a ½ inch border around the edges.
Bake the cheese bread for 10-12 minutes, until the cheese is a golden brown.
Sprinkle with chopped cilantro and slice lengthwise.
