Preheat oven to 400ºF. Spray a muffin tin/tins with nonstick spray; set aside
In a large mixing bowl whisk together the flour, baking powder, baking soda, salt, and sugar.
In a medium mixing bowl whisk together the buttermilk, honey, eggs, and melted butter.
Pour the wet ingredients into the dry and whisk until combined, fold in the cheddar cheese, and spoon the batter into the prepared muffin tin filling each one all of the way.
Bake the muffins for 5 minutes at 400ºF, then turn the heat down to 350ºF and bake for another 10-12 minutes until a toothpick inserted in the center comes out clean.
Melt the butter and honey together in a microwave-safe bowl in 30 second increments, stirring to combine. Using a spoon or pastry brush drizzle or brush onto muffins while they are still warm.
Serve muffins warm with a nice bowl of soup or with some scrambled eggs for breakfast! Or any way you want to enjoy them!
