Instructions
Preheat your oven to 325F.
In a bowl, mix the crushed cookies, sweetener, and melted butter. Press this mixture into the bottom of a greased 8-inch springform pan.
In a blender, combine cream cheese, Greek yogurt, eggs, sweetener, flour, salt, and vanilla extract. Blend until the mixture is smooth.
Pour the creamy filling over the crust in the pan.
Bake the cheesecake for about 45-55 minutes, until the center is set.
Once baked, let the cheesecake cool to room temperature, then refrigerate for at least 4 hours to firm up.
