Instructions
In a large bowl, mix the almond flour and salt.
Add the maple syrup and vanilla extract, then stir in the eggs and almond milk until the batter is well combined.
Allow the batter to rest for 5 minutes to thicken. If it becomes too thick, add a bit more milk.
Heat a non-stick pan over medium heat and add a little oil.
Pour 1/4 cup portions of the batter into the pan and cover it. Cook for 2-3 minutes, then uncover, flip the pancakes, and cook for another 2 minutes.
Continue this process until all the batter is used. Serve the pancakes immediately.
