Preheat your oven to 400°F. Slice the zucchini in half lengthwise and scoop out the seeds with a spoon. Place them on a parchment-lined baking sheet and set aside.
Heat the olive oil in a large skillet over medium-high heat. Toss in the diced onion, carrot, and celery, sautéing for a minute or two.
Add the ground turkey and minced garlic to the skillet. Cook for about 5 minutes until the turkey is lightly browned.
Pour in the pasta sauce and bring the mixture to a boil, then remove from heat.
Spoon the meat mixture into the zucchini boats, and sprinkle the grated mozzarella cheese on top.
Bake for around 15 minutes, or until the cheese is fully melted.
Take the zucchini boats out of the oven and garnish with fresh basil if desired. Serve and enjoy!
