Instructions
Begin by peeling and grating the red potatoes.
Submerge the grated potatoes in a large bowl of ice water to eliminate excess starch.
While the potatoes soak, preheat your oven to 400°F (200˚C).
After a few moments, drain or squeeze the shreds to get rid of all excess water, then transfer to a large bowl.
Incorporate the melted butter, cheddar cheese, whisked eggs, chives, garlic salt, oregano, and pepper into the potatoes.
Take portions of the mixture and form them into patties on a baking sheet.
Bake the patties in the preheated oven for approximately 40-45 minutes or until they achieve a golden brown and crispy texture.
Allow the patties to cool for about 5 minutes prior to serving. Enjoy these warm cheesy treats!
