Instructions
Gather all ingredients together in a large mixing bowl.
In the bowl, mix the corn, cheddar cheese, flour, eggs, milk, chopped chives, salt, and chili powder until thoroughly blended.
Cooking Fritters:
Heat a large skillet over medium-high heat, adding enough oil to cover the bottom.
Once the oil is hot, drop spoonfuls (approximately 2 tablespoons each) of the mixture into the skillet.
Fry for about 1.5 minutes until the edges are golden, then flip and cook until the other side is also golden.
Serve the fritters hot with a dollop of sour cream and a sprinkle of chives for extra flavor. Enjoy!
