Cowboy Caviar

Ingredients
  

  • 1 14 oz can Black Beans drained and rinsed
  • 1 14 oz can Black Eyed Peas drained and rinsed
  • 1 14 oz can Corn drained (or frozen)
  • 1 lb Tomatoes diced. (About 4 Roma tomatoes)
  • 1 Green Bell Pepper diced
  • 1/4 Red Onion diced
  • 1/2-1 cup Cilantro chopped, most of one bunch

Vinaigrette

  • 1/2 cup Canola Oil
  • 1/3 cup White Wine Vinegar
  • Juice of 1 Lime
  • 2 T Sugar
  • 1 teas. Chili Powder
  • Salt/Pepper

Instructions
 

  • Combine all the caviar ingredients in a bowl and toss to combine.
  • Then in a separate smaller bowl, combine vinaigrette ingredients and whisk. Taste and adjust accordingly. Add part of the dressing to the caviar and then add more if necessary.
  • I didn't end up needing the whole amount of vinaigrette, just about half.
