Instructions
Preheat your oven to 400° F and prepare a baking sheet with parchment paper or non-stick foil.
Wash and chop the russet potatoes into small pieces.
In a large mixing bowl, combine the potatoes with olive oil, ensuring they are well-coated. Then add the ranch seasoning and mix thoroughly once more.
Evenly spread the potatoes on the baking sheet, then sprinkle onion powder, black pepper, and a pinch of salt over them.
For Baking:
Cover the baking sheet with foil and bake for 20 minutes.
After 20 minutes, remove the foil and continue to bake for an additional 20 minutes, or until the potatoes are tender and golden brown.
Once cooked, top the potatoes with shredded cheddar cheese and return to the oven for 1-2 minutes, just until the cheese is melted.
