For Mixing the Dough:
In a large bowl, mix together the dry ingredients: flour, baking powder, salt, and sugar. Grate the cold or frozen butter directly into the mixture, ensuring it is well combined as you grate.
Next, grate the cheddar cheese and incorporate it into the mixture. Slowly pour in the cold buttermilk while using a fork to stir the dough until it forms a shaggy consistency.
For Shaping the Biscuits:
Transfer the shaggy dough to a clean surface or leave it in the bowl. Form it into a disk about an inch thick. Fold the right side towards the center, then the left side over the top, alternating crumbs between folds. Rotate and repeat this for a flaky texture.
Flatten the dough to create a rectangle approximately 7 inches by 5 inches. Cut this rectangle into 6 equal pieces with a straight motion. Optionally, trim the edges to enhance the flaky layers.
For Baking:
