1/2cupYellow Oniondiced
1/3cupRed Bell Pepperdiced
1packetTaco Seasoning
1/4cupWater
Creamy Layer:
1/2cupSour Cream
1/2cupMayo
4ozGreen Chilescanned, chopped
1cupCheddar Cheeseshredded
1-2cupsCheddar Cheeseshredded, for topping
Instructions
Preheat your oven to 350°F. In a large bowl, mix the Cheddar Bay Biscuit Mix, 1/2 cup shredded cheddar, and 3/4 cup milk. Make sure to reserve the garlic herb packet.
For Casserole Assembly:
Spread the biscuit mixture evenly into a greased 9x13 pan to create the base.
In a skillet, brown the ground beef. Add in the diced onion and red bell pepper as it cooks. Drain extra grease, then stir in the water and taco seasoning. Simmer until the water reduces slightly.
Layer the beef mixture over the biscuit base in the prepared pan.
In a separate bowl, combine sour cream, mayo, 1 cup shredded cheddar, the green chiles, and the saved garlic herb packet.
Spread the creamy mixture on top of the meat layer.
Finish by sprinkling extra shredded cheese on top, then bake in the oven for approximately 30 minutes.
Allow the casserole to rest for 5 minutes after baking before slicing into portions.
