Instructions
Preheat your oven to 350°F (175°C) and lightly grease a large casserole dish.
Arrange the sliced potatoes evenly in the greased casserole dish and set aside.
In a frying pan, heat the canola oil and add the bacon pieces; cook for about 2 minutes.
Next, add the chopped onions and sauté for 5 to 6 minutes until they begin to take on a golden hue.
Stir in the minced garlic and cook for an additional minute.
Evenly spread the bacon and onion mix over the sliced potatoes. Season everything with salt, pepper, and sage.
Cooking the Bratwurst:
In the same frying pan, cook the bratwurst for 5 to 6 minutes, ensuring to turn them halfway, so they brown on each side.
Add the browned bratwurst to the casserole dish, then pour in the chicken stock and cover the dish with foil.
Bake in the preheated oven for 50 to 60 minutes, or until the potatoes are tender. If desired, sprinkle with fresh sage before serving.
