1cupfinely sifted white flourcan use white whole wheat if you choose
1/2cupsoftened butter
1/4cuppowdered sugar
1cupwhite sugar
grated peel of 1 lemon
2tbspfresh squeezed lemon juice
1/2tspbaking powder
1/2tspsalt
2eggs
extra powdered sugar to garnish
Instructions
Combine the flour, butter, and 1/2 cup powdered sugar in a medium mixing bowl until a loose dough forms. Press the dough into a buttered 8″x8″ pan. Bake for 20 minutes at 350°.
Using a mixer, beat the white sugar, lemon peel, lemon juice, eggs, baking powder, and salt, until they are thoroughly combined. This mixture should be fluffy.
Pour the egg mixture into the hot crust.
Bake the whole thing in a 350° oven for 25 minutes.
Cut into bars and sprinkle with powdered sugar before serving.
