Instructions
Preheat your oven to 350°F (180°C).
In a large bowl, use a fork to mash the ripe bananas until they are smooth.
Incorporate the eggs into the mashed bananas, whisking until the mixture is even.
Add the Greek yogurt, honey, and vanilla extract, mixing until fully blended.
Sprinkle the whole wheat flour over the mixture, and follow with the baking soda.
Gently combine the wet and dry ingredients together until there are no traces of dry flour.
Use a medium ice cream scoop to divide the batter into a greased muffin tin.
Top each muffin with your choice of diced strawberries, blueberries, or chopped walnuts.
Bake in the preheated oven for approximately 20 minutes, or until the muffins are light and fluffy.
Allow the muffins to cool slightly before taking them out of the tin and enjoying!
