In a medium bowl, mix the potato slices with vegetable oil, seasoned salt, black pepper, smoked paprika, and oregano until well coated. Set aside.
Heat a 10" skillet over medium-high heat for about 1 minute. Reduce the heat to medium, add the bacon, and spread it out evenly. Cook until the bacon is crispy and the fat has rendered, approximately 7-10 minutes.
Remove the bacon from the skillet with a slotted spoon, leaving the bacon grease in the pan. Add the minced shallot and garlic to the skillet and cook until fragrant, about 1-2 minutes.
Add the prepared potatoes to the skillet. Toss to coat with the bacon grease and mix with the shallots and garlic. Spread the potatoes into a single layer. Lower the heat to medium-low and cover the skillet. Cook for 7 minutes without stirring.
Remove the lid and flip the potatoes using a spatula. Continue to cook uncovered for an additional 10-12 minutes, or until the potatoes are tender and browned to your preference, stirring occasionally as needed. Enjoy!
