I bet you’ve wanted to see a new recipe and today I have a favorite in our household which is the skillet chocolate chip cookie! I first had this dessert at our favorite pizza joint and I wanted to create my own! Pretty much it’s a gooey chocolate chip cookie that’s topped off with vanilla ice cream (or your favorite flavor). So it’s pretty much crack in a skillet.
I swear this is one of the simplest things you can make! It’s great for a dinner party to impress your friends! To make this amazing skillet of pure joy and happiness you start by making the cookie dough. I used my favorite chocolate chip cookie recipe. It starts off with butter and sugar that you cream together, then you add eggs and vanilla. Next you sift the dry ingredients and add them slowly to the mixture, beat until combined, then add the chocolate chips. Press the dough into a greased cast iron skillet and place in the fridge for at least 2 hours or up to a few days. You bake the cookie at 350F for about 25 minutes or until the edges are set. You want it to be pretty gooey in the middle, that’s what makes this dessert so amazing!

Skillet Chocolate Chip Cookie.
Ingredients
- ½ cup 1 stick unsalted butter, soft
- ½ cup brown sugar packed
- ¼ cup granulated sugar
- 1 large egg
- 1½ teaspoons vanilla extract
- 1½ + 1/8 cups all-purpose flour
- ¾ teaspoons baking soda
- ½ teaspoon salt
- 1 cup semisweet chocolate chips
Instructions
To make the cookie dough
- In a large bowl or stand mixer on medium-high speed, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, and the vanilla; beat until combined.
- In a medium bowl sift together the flour, baking soda, and salt. Slowly add this mixture to the sugar and egg mixture on low speed; mix until combined. Fold in the chocolate chips.
- Press the cookie dough into a greased cast iron skillet and cover with plastic wrap and place in the fridge for at least 2 hours or up to 2 days.
To bake the cookie
- Preheat the oven to 330F
- Once the oven is preheated bake the cookie for 20-25 minutes or until the edges are set you want the cookie to be a bit gooey.
