WINGS!! I love love love wings. The crispy skin, the hot chicken and any delicious sauce they are dipped in.
We often have friends over and I love to create appetizers and dinners with a variety of wings to chose from. Just recently hubby went to a work event at a local bar and was talking up some of the bar’s garlic Parmesan wings. I had to try to create this recipe, the combination sounded so good and the result was impressively pretty and the taste is a light, delicate coating over the crispy wings. Perfect if hot wings are too spicy for you, or you are just looking for a new idea to take along to the tailgate party.
I sauted the garlic in the olive oil and butter to tame it’s strong flavor, and the parmesan just coats the outside and gives off that tangy scent of aged cheese. The flavors go really well together, but this is not a spicy hot wing.
The wings are cooked, then put under the broiler for a little while to get super crispy and delicious! Bonus of no added fat from frying them.
For the record, hubby said my wings are totally different in flavor then the bar wings, but that was a good thing. He liked the flavor of mine a bit more. Plus, and this is important, you probably already have all the ingredients you need to fix these in your kitchen, minus the wings.
Place your wings on a foil covered pan. Salt and pepper them, place them in a 350 degree oven for 25 minutes.
Once they are cooked, drain off the liquid in the pan.
Then preheat your oven broiler to high. Place the wings back in the oven for another 15-20 minutes, checking them often to assure they are getting brown and crispy but not burned.
In a pan, add 4 tablespoons olive oil ( I used extra virgin) and 4 tablespoons of butter.
Melt them and add 1 heaping tablespoon of garlic, let saute for about 3 minutes on medium heat.
Watch carefully to not let it burn.
Pour into a bowl big enough to fit your wings.
Add 3 heaping tablespoons of chopped parsley. Add 1/2 teaspoon salt.
Once your chicken wings have broiled, and they are crispy and brown, remove them from the pan and add to the bowl. Then toss them in the butter/olive oil mixture.
Remove the wings to a serving platter and sprinkle on about 1/3 cup of Parmesan cheese.
Serve and enjoy.
PS: they are still delicious at room temperature!
