Honey Butter Cheddar Muffins

These sweet, buttery, cheesy, and rich muffins are sure to bring all the kiddies to the table for a Sunday brunch!

I mean it doesn’t get much better than a honey butter cheddar muffin! Yes, honey butter cheddar muffin! Boy are these muffins amazing. I could’t stop eating them! They remind me of what I call “crack muffins” from this BBQ place near my house. So Southern and oh so delicious! Perfect for Easter brunch! Let’s get to the recipe shall we?

You’re gonna start by combining the dry ingredients in a large mixing bowl then in a medium sized mixing bowl combine the wet ingredients, now add the wet to the dry. Mix until everything is combined. Now fold in the cheddar cheese. Scoop the batter into a greased muffin tin filling each to the top bake for 5 minutes at 400 this is to help the muffins rise. Then turn the heat down to 350 and bake for another 10-12 minutes until done. Top the muffins with melted honey and butter and allow to cool for a few then serve and enjoy!

Honey Butter Cheddar Muffins

Ingredients

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¼ cup granulated sugar
  • ½ cup buttermilk
  • ¼ cup honey
  • 2 large eggs
  • ½ cup 1 stick unsalted butter, melted
  • 1 cup shredded sharp cheddar cheese

For the topping

  • ¼ half a stick salted butter, melted
  • 2 Tablespoons honey

Instructions

  • Preheat oven to 400ºF. Spray a muffin tin/tins with nonstick spray; set aside
  • In a large mixing bowl whisk together the flour, baking powder, baking soda, salt, and sugar.
  • In a medium mixing bowl whisk together the buttermilk, honey, eggs, and melted butter.
  • Pour the wet ingredients into the dry and whisk until combined, fold in the cheddar cheese, and spoon the batter into the prepared muffin tin filling each one all of the way.
  • Bake the muffins for 5 minutes at 400ºF, then turn the heat down to 350ºF and bake for another 10-12 minutes until a toothpick inserted in the center comes out clean.
  • Melt the butter and honey together in a microwave-safe bowl in 30 second increments, stirring to combine. Using a spoon or pastry brush drizzle or brush onto muffins while they are still warm.
  • Serve muffins warm with a nice bowl of soup or with some scrambled eggs for breakfast! Or any way you want to enjoy them!
